Creamy Cheesy Potato Soup

Instructions:

  1. Cook the Vegetables:
  • In a large pot, add the potatoes, onion, carrot, and celery. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat and let simmer until the vegetables are tender, about 15-20 minutes.
  1. Make the Cheese Sauce:
  • In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly.
  • Gradually add the milk, whisking until smooth. Continue to cook until the mixture thickens, about 3-5 minutes.
  • Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  1. Combine Everything:
  • Pour the cheese sauce into the pot with the cooked vegetables and broth. Stir to combine, and season with salt and pepper to taste.
  • Use a potato masher to slightly mash the potatoes for a thicker texture, or leave it chunky if you prefer.
  1. Serve:
  • Ladle the soup into bowls and top with crispy bacon bits and chives, if desired.

Why Kids Love It: The creamy, cheesy flavor is both familiar and comforting, and the chunky potatoes make it hearty and satisfying. This soup is simple yet rich, with a warmth and creaminess that makes it easy to love.
